These No Bake Granola Bars are super quick, easy and everything you would expect from a delicious and healthy snack.
Ingredients:
- 3 tbsp (180g) coconut oil
- 3 tbsp (180g) honey
- 2 ½ cup rolled oats
- ½ cup chopped dates
- ¼ cup desiccated coconut
- ¼ cup ground almonds
- ¼ cup ground sunflower seeds
- Note: I alternate between different nuts and seeds to give my family a range nutritional benefits
Method:
- Line a rectangular baking tray (roughly 20cm x 30cm) with grease proof paper
- Melt the coconut oil and honey in a pan on a low heat
- Mix in the chopped dates to start softening
- Stir in the desiccated coconut, nuts and seeds
- Add the oats and stir until thoroughly combined
- Press the mixture into the prepared baking tray
- Refrigerate and leave to set for at least 4 hours
- Cut into bar shapes, wrap and keep refrigerated until ready to use
