Baked Beans

A perfect food for baby weaning or to be served as a delicious and healthy side dish at a family meal. We love ours with mackerel or homemade toast. These home made baked beans are ideal for stocking up in the freezer for those busy days.

Ingredients

1 tbsp olive oil
1 medium red onion
1 stick celery
1 carrot
1 tin of chopped tomatoes (opt for sugar free and the fewer ingredients the better!)
200g dried haricot beans
1 small sweet potato
1 tsp cumin
1 tsp cinnamon
1 tsp paprika

Method

  1. Soak beans overnight in a pan and cover with cold water
  2. After a minimum of 8 hours drain and rinse the beans well and cover with fresh water in the pan
  3. Bring to the boil and boil rapidly for 10 minutes
  4. Reduce the heat and cover for 45 minutes
  5. Meanwhile prepare the vegetables by peeling and chopping the onion and celery
  6. Wash and peel carrot and sweet potato
  7. Heat the olive oil in a large saucepan and add the chopped onions
  8. Once the onion has softened add the cumin, cinnamon and paprika
  9. Stir for a minute and add the tinned tomatoes and a splash of water
  10. Add the rest of the vegetables and simmer for 20 minutes or until the vegetables have softened
  11. Remove from the heat and allow to cool for a few minutes
  12. Puree the sauce in a blender and return to the saucepan
  13. Add the cooked and drained beans to the saucepan and mix with the puree
  14. Portion into pots for freezing if you are food prepping or simmer for a few minutes to warm before serving
