Carob and Coconut Energy Balls

Not that the children need the energy boost but they are a super healthy and tasty snack. Definitely a family favourite!

Ingredients:

  • 1 cup dates
  • ¾ cup rolled oats
  • ¼ cup ground sunflower seeds
  • ¼ cup ground hazelnut
  • 1 tbsp chia seeds
  • 2 tbsp almond butter
  • 2 tbsp carob powder
  • 2 tbsp desiccated coconut

Method:

  1. Soak dates in hot water for 10 minutes
  2. Ground the oats for a few seconds using a blender
  3. Drain the dates well
  4. Add the dates, sunflower seeds, hazelnut, chis seeds, almond butter and half the carob powder and blend until combined
  5. Carefully roll into balls
  6. Coat each ball with the remaining carob powder or desiccated coconut
  7. Place in a bowl and store in fridge
  8. Enjoy!
